CEIMB - Carrot, Green Apple & Mint Salad
Ok, so its not the prettiest looking salad.......but it tastes so good!!
I thought there was no way i could get this recipe wrong; the ingredients were simple and the method even more so. Yet i did. I was in such a rush to make this that i didn't pay much attention and instead of grated carrots and apple, it ended up finely chopped. I know in the photos it looks like mush but it was actually really crunchy :)
It tastes great, although i think i was a bit too enthusiastic with the mint. I would happily make this again (in its correct form).
